Grilled Chicken with Sweet Potato and Thai Red Veggies 


I know when you see “Thai red” it’s usually a curry but I find curries don’t fill me and I’m always hungry an hour later so I decided to put my own twist on it. 

Ingredients: (for 2 people) 

2 Chicken fillets 

Aldi Vegetable Fajita Kit (don’t use the sachet though) 

1/2 cup Mushrooms 

1 large sweet potato 

1 tbsp of Thai red curry paste (find the lowest fat one you can) 

Directions: 

Slice sweet potato into small strips. 

Place vegetables in a wok and the sweet potato and cook until sweet potato is soft. 

Put one tbsp of Thai red paste into the veggies and stir. Add another tbsp if you want it very hot. 

Remember to keep moving the veggies in the wok so they don’t stick. 

For the Chicken, heat the George Foreman grill for a few minutes and then when ready, cook for 8 minutes. 

Then serve 💕
