Decided to do some vegetarian recipes this week since I’m going meatless.
Ingredients: (Serves 2)
3 Small – Medium sweet potatoes
90g Red Lentils
1/2 chopped red onion
Greek yogurt (preferably fat free)
Sweet corn (optional)
Pinch of: Garlic Powder, Curry Powder and Ginger
2 tbsp tomato puree
Peel sweet potatoes and boil for 15 minutes on high or until tender.
Taking another saucepan add your lentils into water and boil.
Take a frying pan and put in a little oil, add your onions, carrots and sweet corn. After 2 minutes add in a pinch of garlic and ginger.
Add contents of the frying pan to the lentils. Add in your vegetable stock, pinch of curry powder and tomato purée. Boil until water has evaporated.
When your sweet potatoes are done, you need to mash them. My suggestion is use a food processor. Then when mashed mix together with Greek yogurt. Use as much as you like.
Take your dish and add your lentil and vegetable mix on the bottom and then top with sweet potato mix.
