I usually buy protein bars for a quick snack after the gym but to be honest they can get quite expensive. So I decided that I’d make my own protein muffins and it was actually really simple.
150g Wholemeal Flour
40g Maxi Nutrition Lean Definition Strawberry Protein Powder
1 cup of Blueberries
125ml Unsweetend Almond Milk
115g Fat Free Icelandic Yogurt
2 Medium Eggs
15g Chia Seeds
1 TBSP Vanilla Extract
2 TBSP Baking Powder
Take a mixing bowl and add in your yogurt, blueberries, almond milk, vanilla extract and eggs. Mix well until smooth.
Take another bowl and add in your wholemeal flour, protein powder, baking powder, chia seeds and a pinch of salt. Mix together.
Add your dry mix into the wet mix and stir. No need to over stir, you just want to make sure that they are nicely mixed together and then add in your strawberries.
Take a muffin tray and coat with oil. I used Frylight Coconut Oil spray.
Take you mix and pour it evenly into your muffin tray. I poured my mix into a measuring jug with a lip just so the mix wouldn’t spill everywhere (I once had an incident with the waffle maker and destroyed the kitchen with batter)
Put in the oven for 20-25 minutes at 190 degrees
