Fajita Chicken Salad

Want a simple fun salad that costs next to nothing? Then this is the salad for you!

Ingredients (Serves 3-4)

2 Chicken Breasts

2 Bell Peppers

Cherry Tomatoes

3 Spring Onions

1/2 Cucumber

Bag of Watercress, Spinach and Rocket leaves

Bag of Iceberg Lettuce

Sweetcorn

Sour Cream

Salsa

Fajita Mix

Salt

Pepper

Crushed Chillies

 

Directions

In a bowl add 1/4 pack of Fajita mix, 1tsp black pepper, 1tsp salt (I used Pink Himalayan salt) and a dash of crushed red chillies.

Take your chicken fillets, put them in the bowl and with your hands rub them into the mix. Make sure they are fully covered.

Place in a baking pan that is coated in oil, I use Fry’s Coconut Oil Spray.

Place into the oven at 180 o C for 20-25 mins

While your chicken is baking in the oven, take 2 bell peppers, I used a green and red. Take them and chop them up into small pieces.

Slice 1/2 a cucumber then cut the slices into quarters.

Take 3 spring onions and chop them finely

When you chicken is done cut it up into pieces.

Take your lettuce, spinach, watercress and rocket put it into a bowl. Add your chopped spring onions, cucumber, and peppers. Throw in you chopped chicken, and add your cherry tomatoes and sweetcorn.

Top with sour cream and salsa.

      I do vegan, vegetarian and meat recipes on this blog. I was vegan but for reasons disclosed with my doctor I can no longer live on a vegan diet.
