Stuffed Chicken with Goats Cheese and Spinach
Winner, winner, chicken dinner!
Most meals in my house involve chicken fillets, usually it’s just plain chicken fillets with salad or chips. So I decided to change it up a bit tonight for the family. This recipe is so easy to make, and tastes fecking amazing!
Ingredients (Serves 3)
3 Chicken Fillets
85g Baby Spinach
1 Tub Cordal Garlic & Thyme Goats Cheese
Wash your baby leaf spinach and then tear it up into smaller pieces.
Place spinach into a bowl, add your goats cheese and mix thoroughly.
Take your chicken fillet and slice it 3/4 of the way down, take your cheese and spinach mixture and stuff it into the chicken fillet.
Place your chicken fillets into an oiled baking dish
Season with salt, pepper and paprika.
Pop in the oven at 180 degrees for 25-30 mins.
