Super Bowl Series: Low Fat BBQ Beef Sub

Switching it up from chicken. Made these healthy BBQ beef meatball subs tonight for the family and they were a big hit.

Less than 3% fat beef meatballs ( I bought them in Dunnes Stores)

Walden Farm’s Near Zero Thick & Spicy BBQ Sauce ( Can be purchased here )

Ballymore Crust Soft Grain Sub Rolls ( Aldi )

Bell Pepper

Iceberg Lettuce

Pour BBQ sauce into a bowl and take your meatballs and roll them in the sauce. Making sure to cover them thoroughly.

Place them in a baking dish and pop them in the oven at 180 degrees celcius for 20-25 mins.

While your meatballs are cooking, chop up your onion, mushroom and peppers.

When your meatballs have 10 minutes left, pop your peppers into a frying pan at a medium heat. After 5 minutes add in the onions and mushrooms.

Take your sub roll (toast it or leave it plain)

Top with lettuce, sliced tomato, cooked peppers, onions and mushrooms, top with 2 meatballs and grate low fat protein cheese (available in Dunnes Stores) on top.
