Chicken, Mango and Butternut Squash
Is it obvious that I bought a heart shaped cookie cutter?
I decided to have some fun with my food. Using a cookie cutter I made mango and potatoes into hearts.
Ingredients for 2 people:
1 Butternut Squash
4 Baby potatoes
Pack of mini chicken fillets
Bag of Aldi crunchy salad
Cut your mango into slices and then use the heart shaped cookie cutter to make heart pieces.
Do the same with the potatoes. You can choose to peel the skins or keep them on. I prefer the skins on.
Put your potatoes into a saucepan and boil until cooked. Then drain.
Preheat a George Foreman grill for 5 minutes. Place your chicken fillets on the grill and cook for 8 minutes.
Once potatoes are boiled, chicken is grilled and butternut squash is roasted. Place on a bed of salad and serve.
