Greek Lemon Chicken

Greek Lemon Chicken

This recipe is one of my favourite dishes and it’s simple to make. 

I tend to buy all my ingredients from Aldi. 


Chicken thighs

1 sliced up lemon

1 tbsp honey 

1 tbsp coconut oil or rapeseed oil

1 tbsp lemon juice 

6 cloves of peeled garlic

1 tbsp cayenne pepper

A pinch of Rosemary 

A pinch of Pepper


Season the chicken with pepper. 

In a large bowl add the coconut oil, honey, lemon juice and cayenne pepper. 

Add chicken to the bowl and massage into the skin with your hands. 

Place the chicken into a roasting tin. Add the garlic cloves, lemon wedges and rosemary. 

Cook at 200 degrees celcius for 40 minutes until the chicken has turned golden brown and the lemons have started to caramelise.  

And serve. 
Served with courgette spaghetti and homemade sweet potato fries

Served with salad, green beans and cauliflower rice.
