Roast Turkey Breast with Grilled Vegetables 

I picked up a turkey breast in the local butchers for the family for €8. I usually have chicken but decided I wanted a bit of a change. 

Popped the turkey into the oven at 180 degrees for 1 hour and 20 minutes. 

Chopped up my vegetables: 

1/2 Eggplant (in circles) 

1/2 Courgette (in slices) 

1/2 Red Bell Pepper

1/4 Red Onion

Heated up the George Forman grill and placed them along with asparagus spears and cooked them for 10 minutes. 

Serve up the turkey on a bed of iceberg lettuce with the veggies and enjoy 💕
